Waiting for snack time may be a challenge with one of these in your lunch bag. With a fudge-like texture, cocoa and dates meld together to create a chocolatey, indulgent, RADNUT approved snack.
Ingredients
- 1 cup pitted dates
- 1/3 cup walnuts
- 1/3 cup almonds
- 3 tbsp cocoa powder
- 1/2 tsp vanilla extract
- 1/4 cup unsweetened shredded coconut
- 1 tbsp hemp or chia seeds
Servings: Balls
Instructions
- Soak dates in a bowl with warm water for 5 minutes (to soften)
- Drain water from dates, place in food processor with nuts, cocoa powder, vanilla, coconut, and seeds
- Pulse or process until mixture becomes fine, crumbly, and begins to stick together
- Roll mixture into balls using the palms of your hands. Continue to form balls with remaining mixture. Store in freezer to keep fresh.
- *for more flavor, roll balls in additional cocoa or coconut before freezing
