Hold onto your horses because these muffins are amazing. Bursting with lemon and berry flavor, these will be gobbled up so fast you may need to hide one for yourself at the back of the freezer!
Ingredients
- 1/3 cup flax seed (whole flax seed)
- 1 1/3 cup whole wheat flour
- 2 tsp baking powder
- 1 pinch salt
- 1 tsp cinnamon
- 2 bananas (ripe)
- 1 egg
- 3/4 cup skim or 1% milk
- 1 tbsp lemon rind
- 3/4 cup blueberries (fresh or frozen)
- 1/4 cup raspberries (fresh or frozen)
- 3 tbsp dried cranberries
- 1/3 cup walnuts or pecans

Instructions
- Grind whole flax seed in blender, spice grinder, or magic bullet
- Combine flax, flour, baking powder, salt, cinnamon
- In separate bowl, using a fork mash bananas into egg and milk. Add lemon rind (1 tbsp or rind of a whole large lemon)
- Preheat oven to 350 degrees F. Add dry ingredients into wet and fold until moistened
- Gently fold in berries and nuts. Lightly oil muffin tins
- Using a large spoon, scoop batter into muffin tins. Bake 15-17 minutes until golden brown and inserted toothpick comes out clean

Individually wrap and freeze muffins for an easy grab and go snack.
