Ingredients
- 3 tbsp canola oil
- 1 small banana
- 1 1/3 cup old fashioned oats
- 3 tbsp whole wheat flour
- 1/2 tbsp cinnamon
- 1/2 tsp baking powder
- 1 egg
- 1/3 cup natural almond or peanut butter (melt in microwave 25 seconds)
- 1 tsp vanilla extract
- 1 1/2 tbsp chia seeds
- 1 1/2 tbsp hemp seeds
- 1/4 cup unsweetened shredded coconut
- 1/3 cup dark chocolate chips

Instructions
- In a bowl, mash banana into canola oil with fork
- Add oats, flour, cinnamon and baking powder to same bowl and mix
- Add egg, almond or peanut butter, vanilla extract, and mix
- Preheat oven to 350 degrees F
- Fold in chia seeds, hemp seeds, coconut, and chocolate chips
- Lightly oil baking sheet. Carefully place heaping tablespoons of batter onto the sheet, flatten and form cookie shape with hands if desired
- Bake 10-15 minutes until golden brown. Use a spatula to release cookies from pan so they do not break. Enjoy!
