On those winter days when the world is cold and your body aches, this soothing soup packed with Vitamin A, fiber, flavor, and Vitamin C will warm your soul and bring you back to life.
Ingredients
- 1-2 tsp canola oil
- 6 cloves garlic
- 1 onion
- 3-4 carrots
- 4 celery ribs
- 1 russet potato (250-275g)
- 900 ml chicken broth (no salt added)
- 1/2 tsp fresh thyme
- 1 sprig fresh thyme
- 5 leaves fresh sage
- 3 bay leaves
- 1 heaping tsp dried basil
- 1 heaping tsp dried oregano
- 2 chicken breasts (350-400g)
- 2 1/2 cup water or broth
- salt and pepper (to taste)
- 1 heaping tsp 21 seasoning (Trader Joe's brand- optional)
- 1 bell pepper (yellow, red or orange)
- 1/4 cup cilantro or parsley
- 2 1/2 cup kale
- 2 cup rotini pasta (whole wheat)

Instructions
- Mince garlic, dice onion, chop celery, carrots, potato into bite size pieces. In a large pot on the stove-top, saute onion and garlic in canola oil at medium heat for 2 minutes
- Add celery and carrots to pot. Cover with lid and sweat vegetables at medium heat for 5 minutes, stirring twice in between
- Add 900 ml chicken broth, thyme leaves, throw in a sprig of thyme, minced sage, bay leaves, basil, oregano and simmer (covered)
- Chop chicken breasts into bite size pieces. Add potato and chicken to soup. Add 2 1/2 cup water or broth, salt, pepper, and 21 seasoning to pot
- Bring soup to boil, simmer (covered) on low-medium heat for 15-20 minutes
- Chop bell pepper and cilantro. Tear kale leaves away from stalk into bite size pieces. When measuring kale, pack tightly into measuring cups
- Once soup has simmered 15-20 minutes, add bell pepper, kale and rotini. Bring to boil. Simmer on low-medium heat for 12-15 minutes (covered) until noodles soften and chicken reaches 165 degrees F
- Remove soup from heat, remove thyme sprig, add chopped cilantro, stir, and serve
Recipe Notes
Vegetarians can enjoy this recipe by using a can of drained white kidney (cannellini) beans instead of chicken, and using vegetable broth in the place of chicken broth.
