Ingredients
  • 2 cup roma or cherry tomatoes (diced)
  • 1/2 cup sweet onion (diced)
  • 1/4 cup fresh basil
  • 1 clove garlic (optional)
  • 1 tsp olive oil
  • 1 1/2 tbsp balsamic vinegar
  • 1/2 tsp honey
  • 1/8 tsp granulated garlic
  • 1/4 tsp dried basil (heaping)
  • 1 1/2 tbsp light feta cheese or parmesan
  • salt and pepper (as desired)

Instructions
  1. Dice tomatoes and onion, mince garlic and basil and add to a bowl
  2. In a small separate bowl prepare dressing: mix together olive oil, balsamic vinegar, honey, granulated garlic, dried basil, salt and pepper with a fork
  3. Toss bruschetta with dressing and cheese and serve with whole wheat pita or toasted french bread
