Ingredients
  • 2cup roma or cherry tomatoes(diced)
  • 1/2cup sweet onion(diced)
  • 1/4cup fresh basil
  • 1clove garlic(optional)
  • 1tsp olive oil
  • 1 1/2tbsp balsamic vinegar
  • 1/2tsp honey
  • 1/8 tsp granulated garlic
  • 1/4tsp dried basil(heaping)
  • 1 1/2tbsp light feta cheese or parmesan
  • salt and pepper(as desired)
Instructions
  1. Dice tomatoes and onion, mince garlic and basil and add to a bowl
  2. In a small separate bowl prepare dressing: mix together olive oil, balsamic vinegar, honey, granulated garlic, dried basil, salt and pepper with a fork
  3. Toss bruschetta with dressing and cheese and serve with whole wheat pita or toasted french bread
