We have been raised in a culture where we serve burgers with fries. Why not use that plump sweet potato and oven to make a side of fries you can enjoy without guilt. Move over McDonald’s, these babies are bursting with flavor, beta-carotene and fiber.

Ingredients
  • 1 sweet potato (800g-850g)
  • 1/2 tbsp rosemary infused olive oil
  • 1/2 tbsp canola oil
  • salt (to taste)
  • 1/2 tsp black pepper (add more if desired)
  • 1/2 tbsp 21 seasoning (Trader Joe's mix of spices without added salt)

Instructions
  1. Peel sweet potato and chop into matchsticks
  2. Pre-heat oven to 400 degrees F and have a rack set in center of oven
  3. Place chopped potato into bowl, add rosemary oil and canola oil (can use only canola oil and add 1 tsp fresh chopped rosemary instead if desired)
  4. Add salt, pepper, 21 seasoning and other spices as desired
  5. Mix fries in bowl to even coat with oil and spice and place on a lightly oiled baking sheet. Do not overlap fries on top of one another
  6. Bake for 20 minutes at 400 degrees F
  7. Flip fries, add another 1 tsp of oil if needed and bake for another 20 minutes
  8. Broil fries on high heat for 2-3 minutes or until they become golden and crispy
Recipe Notes

Reheating leftover fries in the microwave will make them soften. Reheat leftovers in the oven and broil again to keep the structure of the fries.
