The RADNUT team loves Ukrainian food, so inevitably the leftover cabbage in our fridge led to a strong craving for cabbage rolls. Our only issue was a complete lack of patience to carefully form the rolls. We wanted cabbage rolls and we wanted them now – and that is exactly how we ended up with these easy turkey lentil cabbage rolls in a bowl!
Ingredients
- 1/2 onion
- 1 red bell pepper
- 5 clove garlic
- 1/2 head green cabbage
- 350-400 grams ground turkey
- 1 can diced tomatoes (No Salt Added; 796 ml)
- 2 1/2 tbsp tomato paste
- 1-2 tsp paprika
- 1/4 tsp salt (heaping)
- 1 tsp black pepper
- 2 tbsp brown sugar
- 1/2 tsp chili flakes
- 3 bay leaves
- 1/4 cup brown or green lentils
- 3/4 cup brown rice
- 1 tsp thyme

Instructions
- Dice onion and bell pepper, mince garlic, and thinly slice cabbage
- In a large pan, sautee turkey (season with extra salt and pepper if desired) at medium heat for 4 minutes
- Add onion and garlic and cook 4-5 minutes. Add cabbage and sautee 1-2 minutes
- Add bell pepper, diced tomatoes, tomato paste, paprika, salt, black pepper, sugar, chili flakes, bay leaves, lentils and stir well. Simmer covered for 15 minutes, stirring once in between
- Cook rice in separate pot. Season water with additional salt and pepper if desired
- After cabbage has simmered, add thyme, stir well and cook covered for 10-20 minutes longer until cabbage and lentils soften
- Mix cooked rice into cabbage. Garnish with cilantro and additional thyme, pepper, and chili flakes if desired
