We can’t tell, is this a healthy snack or is this dessert? What if we told you that this pudding contains soluble fiber, healthy fats, protein, probiotics which can be beneficial to gut health AND it tastes amazing. You don’t believe us? You’ll just have to try it and see for yourself.
Ingredients
- 3/4 cup plain 1% or 2% kefir
- 1 tbsp chia seeds
- 1/4 tsp cinnamon
- 1/2 tsp vanilla extract
- 1/2 tsp maple syrup
- 1/4 cup mango (frozen or fresh)
- 1/4 cup pineapple (frozen or fresh)
- 1 tbsp water (only if blending fruit)
- 1 tbsp almonds (toasted)
- 1 tbsp pistachios (toasted)
Servings: Serving
Instructions
- Pour kefir into a container or small jar. Add chia seeds, cinnamon, vanilla, maple syrup and stir well
- If wanting a smooth texture, blend together mango, pineapple and water and add to kefir mixture. Or dice mango and pineapple and add to kefir. Refrigerate 3 hours or overnight
- Top with almonds and pistachios. Toasted nuts will have a richer flavor and can be stored in the refrigerator

Kefir is a fermented dairy product which has a sour taste and contains many strains of healthy bacteria and yeast. It can be found at many grocery and natural food stores.
