Vanilla Pineapple Mango Kefir Chia Pudding

Ingredients
  • 3/4cup plain 1% or 2% kefir
  • 1tbsp chia seeds
  • 1/4tsp cinnamon
  • 1/2tsp vanilla extract
  • 1/2 tsp maple syrup
  • 1/4cup mango(frozen or fresh)
  • 1/4cup pineapple(frozen or fresh)
  • 1tbsp water(only if blending fruit)
  • 1tbsp almonds(toasted)
  • 1tbsp pistachios(toasted)
Instructions
  1. Pour kefir into a container or small jar. Add chia seeds, cinnamon, vanilla, maple syrup and stir well
  2. If wanting a smooth texture, blend together mango, pineapple and water and add to kefir mixture. Or dice mango and pineapple and add to kefir. Refrigerate 3 hours or overnight
  3. Top with almonds and pistachios. Toasted nuts will have a richer flavor and can be stored in the refrigerator

Kefir is a fermented dairy product which has a sour taste and contains many strains of healthy bacteria and yeast. It can be found at many grocery and natural food stores.
